Banana Gumdrop Muffins (or loaf)
1-3/4 cups all-purpose flour (gluten-free or regular)
1/2 tsp. soda
1-1/2 tsp. baking powder
3/4 tsp. salt
3/4 cup white sugar
4 or 5 ozs gumdrops cut in small pieces (18 gumdrops)
1 egg (beaten well)
1/4 cup cooking oil
1/2 cup milk
1 tsp. vanilla
2 tsp. grated orange rind (optional)
1 cup mashed bananas
Measure
first 5 ingredients into a bowl and stir in gumdrop pieces.
Combine
remaining ingredients and stir into dry mixture until all blended. (Do not
beat)
Bake
in 350 F oven for about 20 minutes for muffins and 50 minutes for a loaf pan.
