NEARLY NORMAL GLUTEN-FREE FLOUR
Here is a recipe that I found online when I first went gluten-free. It was developed by Jules Shepard a gluten-free cookbook author. She now sells a version of this flour on her website … Jules Gluten-Free.

This flour has worked in every normal recipe I have tried so far. Enjoy! ㋡
Ingredients:
1 cup rice flour
1 cup potato starch (not potato flour)
1 cup cornstarch
1/2 cup corn flour
1/2 cup tapioca flour (or tapioca starch)
4 teaspoons xanthan gum
Directions:
Mix all ingredients together; store in an airtight container. Use, cup for cup, in recipes that call for normal all-purpose flour (except for bread unfortunately).
NOTE: I usually make a double batch of the flour.
